From "Silk Okaya," the capital of raw silk that developed by utilizing nature and abundant water, after the war, it rapidly transformed into a precision industrial city centered on watches and cameras. Today, amid technological innovation centered on electronics, as an industrial cluster, Okaya is actively working in advanced and new industrial fields by upgrading, integrating, and systemizing local technology and introducing electronic and design development technologies. ★About the sake brewing of "Kamiwatari"All sake, from the sake to be exhibited to the regular sake, is brewed with great care by the young brewers in the frigid region of Suwanohira, Shinshu (Okaya City). The brewers work together to brew sake with passion and love in every step of the process, faithful to the basics and without sparing any effort, led by master brewer Komatsu Yukio (Suwa master brewer). The rice that determines the flavor of sake is all Nagano-grown rice, including Kinmon Nishiki, Takane Nishiki, Yamaenishiki, Miyamanishiki, Hitogokochi, Shirakabanishiki, Yamada Nishiki, and Yoneshiro, and these eight or more types of rice are used according to the characteristics of the product. The water source is underground water from Mt. Hachibuse, which is located behind the brewery. All of the products are made with carefully selected Shinshu ingredients.
